Halloween is about tricks and treats, but mostly it’s about the treats. These delicious cupcakes are both a trick and a treat. They seem like ordinary festive cupcakes and they taste like ordinary Halloween party treats, but the trick is they have a secret healthy side. – Boo!
The main idea behind these cupcakes is the creepy green matcha icing. That’s right, the green colour is from matcha green tea powder. Matcha is full of antioxidants and is a much healthier alternative when compared to green food colouring, which is full of “colour.” We, at Creative Plume, love to make cupcakes with green icing for Halloween and, this year, we thought we would try a whole food approach to green. – Are you scared yet?
When hosting a party, there are many allergy and dietary restrictions to keep in mind. We also made these scarily healthy cupcakes with a gluten free and dairy free cake batter. Perfect for any Celiac diets! Even better is that this recipe tastes as good as any other cupcake recipe despite the rather shocking secret ingredient. All your guests will enjoy them and no one will believe you when you say what’s in them.
You can use your favourite cake batter recipe or this simple gluten free, slightly healthier option. Bet you want to know what the secret ingredient is in this recipe; they are chickpea based! – Spooky isn’t it?
Gluten Free Chickpea Chocolate Cake:
2 – 16 oz cans of chickpeas
4 cups semi-sweet chocolate chips (3 cups melted and 1 cup unmelted)
1 ½ cups of sugar
1 tsp baking powder (make sure this is a gluten free brand if serving to someone with gluten allergies)
How to make the cupcakes:
Blend chickpeas and eggs in a food processor until completely smooth. Melt 3 cups of the semi-sweet chocolate chips in a microwave or double boiler and mix into chickpea and egg mixture. Mix in the sugar and baking powder. Then mix in 1 cup of unmelted chocolate chips. Pour batter into lined muffin tins and bake for 30-40 minutes at 350 degrees Fahrenheit. This recipe will make about 12 cupcakes.
How To Make The Creepy Green Gluten Free Matcha Icing:
You can use your favourite vanilla icing recipe and add matcha to it or use this gluten-free/dairy-free recipe.
6 cups powdered sugar
½ cup boiling hot water
3 1/4 cup butter or margarine for dairy-free option
1 tbsp pure vanilla extract
2 tbsp matcha powder – Buy Online
How to make the matcha icing:
Whisk together powdered sugar and boiling water until smooth.
Add margarine/butter to the sugar mixture and stir until smooth. Stir in vanilla. Stir in Matcha. Refridgerate until needed.
Once the cupcakes are cooled ice them and for and extra spooky touch you can add a cupcake wraps, sprinkles or other decorations. You can buy these in baking supply stores or online.
